Mother’s Day is just around the corner, so it’s time to set the menu. Whether it’s breakfast, brunch, afternoon tea or dinner by candlelight, these recipes will impress her without exhausting you. Breakfast in Bed

Breakfast in bed is a dream for many busy moms. Get a tray decorated with a single rose in a bud vase and fill it with her favorites, like hot coffee or tea, some fresh fruit and these yummy applesauce muffins with streusel topping. This recipe is easy enough that the kids can help.

Preheat the oven to 375 degrees F and have the kids put paper liners in the muffin tins. Put on one of our aprons for men and melt 6 tablespoons of butter in a microwave safe bowl on high for 30 to 60 seconds, then set it aside to cool a bit. Mix together the dry ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

In a separate bowl, mix together 2 eggs, ⅔ cup brown sugar and 1 ½ cups chunky applesauce. Add the wet ingredients to the dry, and mix until you can’t see anymore flour. Using an ice cream scoop, drop one scoopful of muffin batter in each cup. Fill about ⅔ full.

Mix together:

  • ⅓ cup brown sugar, packed
  • 1 tablespoon all-purpose flour
  • ¼ teaspoon cinnamon
  • 1 tablespoon cold butter

Use a fork to mix ingredients until crumbly. Sprinkle on the tops of the muffins. Bake muffins for 20 minutes or until a toothpick stuck in the center comes out clean.

Family Brunch

French toast is an easy and delicious brunch dish. You can use white or whole grain sandwich bread for french toast, or you can get creative and use challa, sliced brioche or raisin bread. This recipe for oven baked french toast is super easy and you do most of the work the night before.

Melt ½ cup butter and coat the bottom and sides of a 9x13 baking pan with the butter. Pour any leftover butter into the bottom of the pan. Sprinkle ¾ cup brown sugar and 1 tablespoon cinnamon over the butter. Put two layers of bread into the pan.

Mix together 6 eggs, ½ cup of milk and a pinch of salt, and pour this over the bread. Cover the pan with plastic film and put it in the refrigerator overnight. In the morning, preheat the oven to 350 degrees and bake for 30 minutes. To serve, lift the bread out with a spatula and turn it over on the plate with the brown sugar side up. This can get a bit messy, so be sure to wear one of our collection of aprons for men.

Tea Time

An afternoon break is a great time for a treat that looks spectacular and is very simple to make. Pineapple upside down cake is so delicious and so easy! You can make this in a round cake pan or a cast iron skillet, depending on what you have.

Preheat the oven to 350 degrees. Melt ½ cup of butter in the pan or skillet, then sprinkle 1 cup of brown sugar over the butter and stir. When these have melted together, remove the pan from the heat and place slices of pineapple all over the bottom of the pan. Some people like rings with maraschino cherries in the center, but slices are fine, too. Try to cover as much of the pan as you can.

Mix together 1 cup all-purpose flour, 1 teaspoon baking powder, ¼ teaspoon salt and 1 cup white sugar. Add 4 beaten eggs, 1 tablespoon melted butter and 1 teaspoon almond extract. Mix thoroughly and pour batter over the pineapple, being careful not to dislodge any pieces. Bake for 30 to 40 minutes until a toothpick inserted in the center comes out clean. Let cool for ten minutes.

Loosen the sides of the cake with a knife. Use a plate that is bigger than the skillet or pan. Place the plate on top of the skillet and then turn it over. The cake will come out with the pineapple on the top. Serve warm or cold. This dessert is delicious with whipped cream!

Romantic Dinner for Two

If a romantic evening for two is on your list, impress her with a light springtime meal of shrimp with fresh peas. You can serve this over your choice of pasta, such as linguini or small shells, or rice if you prefer. Boil the pasta in plenty of water. When the pasta is done, drain it and set it aside. Heat 2 tablespoons of olive oil in a skillet, and add a clove of minced garlic--or not, depending on your mood--and saute for 30 seconds. Add a pound of shelled and deveined shrimp and a cup of green peas. Saute for 4 minutes or until the shrimp is bright pink. Add salt and pepper to taste.

Serve over pasta and sprinkle with some parmesan cheese. Add a salad, some white wine and a candle, which you can light with the matches you keep in the pocket of one of our aprons for men. Perfect!
